  • 1 cup uncooked brown rice, about 3 cups cooked
  • 1 packet low-sodium taco seasoning
  • 1/2 cup onion, diced
  • 1/2 cup bell pepper, diced
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, fresh, frozen or canned
  • 1 cup low-sodium salsa
  • 1/2 cup plain nonfat Greek yogurt
  • 1/2 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup shredded reduced-fat cheese
  • 1 avocado, sliced
  • Fresh cilantro, optional
  • Salt and pepper to taste
  • Lime wedges, optional

Step-by-Step Instructions

  1. Cook the rice: Prepare brown rice according to package directions. Fluff and set aside to cool slightly.
  2. Cook the beef: Heat a large skillet over medium heat. Add ground beef and cook until browned and fully cooked, breaking it apart as it cooks. Drain excess fat if necessary.
