Step-by-Step Instructions
- Cook the pasta: Prepare the protein pasta according to package directions until just al dente. Drain and set aside.
- Season the chicken: Toss the chicken with smoked paprika, garlic powder, onion powder, black pepper and salt.
- Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for about 6–8 minutes, stirring occasionally, until browned and cooked through to 165°F (74°C).
- Add the BBQ flavor: Reduce the heat and stir about half of the BBQ sauce into the cooked chicken until evenly coated.
- Make it creamy: In a large saucepan over low heat, add the milk and reduced-fat cheddar. Stir until the cheese melts. Remove from direct heat and stir in the Greek yogurt until smooth.
- Combine: Add the cooked pasta to the cheese sauce and stir until coated. Fold in the BBQ chicken and remaining BBQ sauce.
- Portion: Divide evenly among four meal-prep containers. Garnish with green onions and a light BBQ drizzle if desired.
