
High-Protein Cheeseburger Bowls
These High-Protein Cheeseburger Bowls deliver all the classic burger flavor in an easy meal-prep bowl. Lean seasoned beef, crispy roasted potatoes, lettuce, tomatoes, pickles, reduced-fat cheddar and a lighter Greek-yogurt burger sauce make a satisfying meal with approximately 40–45g of protein per serving.
Ingredients – Makes 4 Servings
- 1 1/2 lb (680g) 93% lean ground beef
- 1 1/2 lb (680g) baby or Yukon Gold potatoes, diced
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1/2 tsp salt, plus more to taste
- 1/2 tsp black pepper
- 4 cups shredded lettuce
- 1 cup cherry tomatoes, halved
- 1/2 cup diced dill pickles
- 1/4 cup diced red onion
- 3/4 cup reduced-fat shredded cheddar cheese
Lighter Burger Sauce
- 1/2 cup plain non-fat Greek yogurt
- 2 tbsp light mayonnaise
- 2 tbsp ketchup
- 1 tbsp yellow mustard
- 1 tbsp pickle juice
- 1/4 tsp garlic powder
- Salt and black pepper to taste
Step-by-Step Instructions
- Roast the potatoes: Heat oven to 425°F (220°C). Toss diced potatoes with olive oil, half the garlic powder, half the onion powder, paprika, salt and pepper. Spread on a sheet pan and roast for 25–30 minutes, turning once, until browned and tender.
- Cook the beef: Heat a large skillet over medium-high heat. Add ground beef and the remaining garlic and onion powder. Cook for 6–8 minutes, breaking it into crumbles, until browned and fully cooked. Drain excess fat if necessary.
- Make the burger sauce: Whisk Greek yogurt, light mayonnaise, ketchup, mustard, pickle juice and garlic powder together until smooth. Season to taste.
- Build the bowls: Divide roasted potatoes and cooked beef among four meal-prep containers.
- Add the toppings: Add cheddar, lettuce, tomatoes, pickles and red onion. For best meal-prep texture, keep cold vegetables and sauce in separate compartments or containers until serving.
- Serve: Reheat the beef and potatoes, then add the fresh toppings and drizzle with burger sauce.
