High-Protein Beef & Rice Bowls
These High-Protein Beef & Rice Bowls combine lean ground beef, rice and colorful vegetables for an easy, satisfying meal prep. They are ideal for lunch, dinner or post-workout nutrition.
Ingredients – Makes 4 Bowls
- 1 lb 93% lean ground beef
- 1 tsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp low-sodium soy sauce
- 1 tbsp Worcestershire sauce
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups cooked white or brown rice
- 1 cup mixed vegetables
- Optional green onions or sesame seeds
Instructions
- Heat olive oil over medium heat and cook onion for 2–3 minutes.
- Add garlic and cook for 30 seconds.
- Add ground beef and cook until browned and fully cooked.
- Drain excess grease if necessary.
- Add soy sauce, Worcestershire sauce, paprika, salt and pepper.
- Add vegetables and cook until heated through.
- Divide rice among four meal-prep containers and top with the beef mixture.
- Garnish with green onions or sesame seeds if desired.
