- 1.5 lbs boneless, skinless chicken breast
- 1.5 lbs baby potatoes, halved
- 3 tablespoons olive oil, divided
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 1 tablespoon fresh parsley, chopped (optional)

Step-by-Step Instructions
- Prepare: Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly coat it with cooking spray.
- Season potatoes: Toss the potatoes with 1 tablespoon olive oil, half of the minced garlic, Italian seasoning, paprika, salt and pepper. Spread them over one side of the baking sheet.
- Prepare chicken: Coat the chicken with the remaining 2 tablespoons olive oil, remaining garlic, salt and pepper. Arrange it on the other side of the baking sheet.
- Bake: Bake for approximately 25–30 minutes, or until the chicken reaches 165°F (74°C) internally and the potatoes are golden and fork-tender.
- Finish: During the final 5 minutes, sprinkle Parmesan over the chicken and potatoes and return to the oven until melted and lightly golden.
- Portion: Allow the chicken to rest briefly, slice if desired, then divide the chicken and potatoes evenly among four meal-prep containers. Garnish with parsley.
