Ingredients – Makes 6 Cups

1/2 cup plain Greek yogurt, 2% or nonfat

1 scoop (30 g) vanilla protein powder

2–3 tbsp monk fruit, erythritol, or preferred sweetener

1 tsp vanilla extract

1 tsp lemon juice

1/2 cup sugar-free whipped topping

1/2 cup fresh berries, optional

Instructions

  1. Make the crust: Mix the graham cracker crumbs, melted coconut oil or butter, and crust sweetener until combined.
  2. Press and chill: Divide the crust mixture among 6 lined muffin cups. Press firmly into the bottoms and refrigerate while preparing the filling.
  3. Beat the filling: Beat the softened cream cheese until smooth and creamy.
  4. Add the protein: Mix in the Greek yogurt, vanilla protein powder, sweetener, vanilla extract, and lemon juice until fully combined.
  5. Fold: Gently fold in the sugar-free whipped topping until the mixture is light and fluffy.
  6. Fill the cups: Spoon the cheesecake filling over the chilled crusts and smooth the tops.
  7. Chill: Refrigerate for at least 2 hours or until set. Add fresh berries before serving if desired.
