
Chicken Bacon Ranch Protein Bowls
Loaded with juicy chicken breast, crispy turkey bacon, roasted potatoes or rice, vegetables and a lighter ranch sauce, these Chicken Bacon Ranch Protein Bowls make a satisfying meal prep with approximately 45–50 grams of protein per serving.
Ingredients – Makes 4 Bowls
- 1 1/2 pounds boneless, skinless chicken breast, cut into bite-size pieces
- 1 1/2 pounds baby gold potatoes, diced, or about 4 cups cooked rice
- 8 slices turkey bacon
- 4 cups broccoli florets or vegetables of choice
- 1 tablespoon olive oil or cooking spray
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Lighter Ranch Sauce
- 1/2 cup nonfat plain Greek yogurt
- 2 tablespoons light ranch dressing or ranch seasoning to taste
- 1–2 tablespoons unsweetened milk, as needed to thin
- Optional: lemon juice, dill or chopped chives
Step-by-Step Instructions
- Prep the chicken: Season chicken with garlic powder, onion powder, smoked paprika, salt and pepper.
- Cook the potatoes or rice: For potatoes, toss with a little olive oil and seasoning and roast at 400°F for about 20–25 minutes, turning halfway, until tender and browned. Or prepare rice according to package directions.
- Cook the chicken: Heat a skillet over medium-high heat. Cook chicken for about 6–8 minutes, stirring occasionally, until browned and the thickest pieces reach 165°F.
- Cook the vegetables: Steam, roast or air-fry broccoli until tender-crisp.
- Cook the turkey bacon: Cook until crisp, then chop into bite-size pieces.
- Make the lighter ranch: Stir Greek yogurt with light ranch or ranch seasoning. Add a little milk until it reaches your preferred consistency.
- Build the bowls: Divide potatoes or rice, chicken and vegetables among four meal-prep containers. Sprinkle with turkey bacon. Keep ranch separate until serving for the best texture.
