
High-Protein Breakfast Protein Pancakes
Start the day with a stack that works as hard as you do. These High-Protein Breakfast Protein Pancakes combine oats, eggs and egg whites, Greek yogurt and protein powder for a fluffy, satisfying breakfast that is easy to prep ahead and delivers approximately 35–45 grams of protein per serving.
Ingredients – Makes 4 Servings
- 2 cups old-fashioned rolled oats
- 2 scoops vanilla protein powder
- 4 large eggs
- 1 cup liquid egg whites
- 1 cup nonfat plain Greek yogurt
- 1 cup unsweetened milk of choice
- 2 teaspoons baking powder
- 2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
- Pinch of salt
- Nonstick cooking spray
- Fresh berries, sliced banana or additional Greek yogurt for serving, optional
- Sugar-free or light maple syrup, optional
Step-by-Step Instructions
- Add the oats to a blender and blend until they resemble a fine flour.
- Add protein powder, eggs, egg whites, Greek yogurt, milk, baking powder, vanilla, cinnamon and salt.
- Blend until the batter is smooth. Let it rest for 2–3 minutes so the oats can absorb some of the liquid.
- Heat a nonstick skillet or griddle over medium heat and lightly coat with cooking spray.
- Pour about 1/4 cup batter per pancake onto the hot surface.
- Cook for 2–3 minutes, or until bubbles appear and the edges begin to set. Flip and cook another 1–2 minutes until golden and cooked through.
- Repeat with the remaining batter, adjusting the heat as needed.
- Divide into four meal-prep servings and add your preferred toppings when ready to eat.
