High-Protein Buffalo Chicken Pasta

Turn classic buffalo chicken flavor into a satisfying high-protein meal prep. Tender chicken breast, protein pasta, buffalo sauce, Greek yogurt and reduced-fat cheese create a creamy, spicy pasta that is easy to portion for the week.

Ingredients

  • 12 oz high-protein pasta, such as penne or rotini
  • 1 lb boneless, skinless chicken breast
  • 1/2 cup buffalo sauce, preferably lower-sugar
  • 1/2 cup reduced-fat cream cheese
  • 1/2 cup plain non-fat Greek yogurt
  • 1/2 cup reduced-fat shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and black pepper to taste
  • Optional: chopped celery, red pepper flakes, ranch seasoning or blue cheese crumbles

Instructions

  1. Cook the protein pasta according to package directions. Drain and set aside.
  2. Season the chicken with garlic powder, onion powder, salt and pepper. Cook until the center reaches 165°F, then rest briefly and slice or shred.
  3. Over medium-low heat, combine buffalo sauce and reduced-fat cream cheese until smooth. Remove from high heat before stirring in the Greek yogurt.
  4. Add the chicken to the buffalo sauce and toss until evenly coated.
  5. Add the cooked pasta and stir in half of the shredded cheddar.
  6. Divide evenly among four meal-prep containers and top with the remaining cheese and green onions.
  7. Refrigerate in airtight containers for up to 4 days. Reheat until hot before serving.
