Why You’ll Love These Bowls

  • Approximately 45–52 grams of protein per serving
  • Four filling meals from one recipe
  • Your choice of lean ground beef or lean ground turkey
  • A homemade sauce with adjustable sweetness and heat
  • Easy to refrigerate, freeze and reheat

Ingredients

Roasted Potatoes

  • 1½ pounds Yukon Gold or baby potatoes, cut into ½-inch cubes
  • 1½ tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

High-Protein Sloppy Joe Mixture

  • 2 pounds 93% lean ground beef or lean ground turkey
  • 1 small yellow onion, diced
  • 1 green bell pepper, diced
  • 3 garlic cloves, minced
  • 1 cup tomato sauce
  • ½ cup reduced-sugar ketchup
  • 2 tablespoons tomato paste
  • 1½ tablespoons Worcestershire sauce
  • 1 tablespoon yellow mustard
  • 1 tablespoon apple cider vinegar
  • 1–2 tablespoons brown sugar, honey or maple syrup, optional and to taste
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼–½ cup water, only as needed

Optional toppings: sliced pickles, green onions or reduced-fat cheddar. Add steamed green beans or another vegetable for extra volume.

Instructions

  1. Prepare the oven: Preheat the oven to 425°F. Line a large sheet pan for easier cleanup.
  2. Season the potatoes: Toss the cubed potatoes with olive oil, garlic powder, smoked paprika, onion powder, salt and pepper. Spread them in one layer.
  3. Roast: Roast for 25–35 minutes, turning halfway through, until browned and tender.
  4. Cook the meat: Brown the beef or turkey in a large skillet, breaking it into small pieces. Cook ground beef to 160°F or ground turkey to 165°F. Drain excess fat if necessary.
  5. Build the flavor: Add the onion and bell pepper and cook until softened. Stir in the garlic for about 30 seconds.
  6. Simmer the sauce: Add the tomato sauce, ketchup, tomato paste, Worcestershire sauce, mustard, vinegar, optional sweetener and seasonings. Simmer uncovered for 8–12 minutes until thick, adding water only if needed.
  7. Portion: Divide the roasted potatoes and Sloppy Joe mixture evenly among four meal-prep containers. Cool before covering and refrigerating.

Estimated Nutrition

Per serving: approximately 620–740 calories, 45–52 grams of protein, 58–72 grams of carbohydrates and 20–30 grams of fat.

Nutrition values are estimates and will vary with the meat, ketchup, cooking oil, toppings, brands and portions used.

Storage, Freezing and Reheating

  • Refrigerator: Store cooled portions in airtight containers for 3–4 days.
  • Freezer: Freeze the Sloppy Joe mixture for 2–3 months. Potatoes may also be frozen, although they will soften.
  • Reheating: Reheat until the center reaches 165°F. An air fryer or skillet can help the potatoes regain crispness.
  • Cold toppings: Keep pickles, green onions and other cold garnishes separate until serving.

Easy Variations

  • Use lean turkey for a lighter bowl or lean beef for classic flavor.
  • Swap the potatoes for roasted sweet potatoes or cauliflower rice.
  • Choose no-sugar-added ketchup and omit the sweetener to reduce added sugar.
  • Add mushrooms, zucchini or grated carrots to the meat mixture.
  • Add jalapeño, cayenne or chipotle for extra heat.
  • Finish with a measured portion of reduced-fat cheddar.

Food-Safety Notes

Cook ground beef to a minimum internal temperature of 160°F and ground turkey to 165°F. Refrigerate prepared food within two hours and reheat leftovers to 165°F.

Frequently Asked Questions

Can I make the Sloppy Joe mixture ahead?

Yes. Prepare it in advance, cool it promptly and refrigerate it in an airtight container for 3–4 days.

How do I fix a watery sauce?

Simmer it uncovered until thickened. Tomato paste will also add body, and water should only be added when the mixture becomes too thick.

Can these bowls be frozen?

Yes. For the best texture, freeze the Sloppy Joe mixture separately and roast fresh potatoes when you are ready to serve it.

How can I lower the calories?

Use lean ground turkey, reduce the potato portion or replace part of it with cauliflower, measure the oil and choose lower-sugar sauce ingredients.
